Galvanisation should not cause problems as the buildup is quite limited and the material is relatively hard.
Paint/powdercoat can be an issue in the bore with the reduction in diameter and also on the mating surface between the upright and the hub pack.
It usually gets too thick and forms a soft(er)/compressible layer which is not good for a solid connection like you want between the hub and upright.
If uprights are painted/powdercoated I'd recommend removing the paint from the bore and the mating surface where the hub unit sits. Spray some corrosion inhibiter on the metal when fitting and it should be fine. Washout will be minimal/nonexistent and it should keep moisture out and stop most corrosion.
