If and when I next take the seats out I think I'll cut the metal off behind the seats and put some oem style rubber U trim on the fibreglass to tidy up the edges.

 

That is what i did.
Keep in mind that if it ever comes to resale it may not be to everybody´s liking. (ie butchered, unsafe etc)

I don't think I would have ever noticed when buying the car unless I was an experienced VX user.

Butchered maybe but there's absolutely no way that it's unsafe. The unsafe bit is that the roll over bar has a section cut away from it which seems bonkers to me, but the headrest plates do nothing other than you could argue they would stop the glass hitting you if the rear window smashed. But the seat would do that.

They're there to stop your head hitting the (metal) rollbar in the event of a rear-end shunt.

Ouch, you have my sympathy G. Don't understand why they aren't on an S2 or S3. Do you mean the cut out our the plate? The plates are attached to the roll bar so the seat is still hitting the metal.
